Vidalia Season

Coming from Louisiana I put onions in everything. O Wise One came home the other day with a 10 pound bag of Vidalia onions that he bought beside the road. I guess the fire department was selling them to raise money. So we have enjoyed Vidalia onions with almost every meal.  It is the perfect time of the year because we are eating alot of vegetables these days out of the freezer and jars in an attempt to empty the freezer as much as possible before the garden comes in again.

Last night it was yellow squash smothered in Vidalia onions and a little bacon...

Stuffed peppers, both bell and banana, covered in a sauce of smothered Vidalia onions, roast peppers and home canned tomatoes.

Some buttermilk cornbread

And a salad of fresh lettuce and boiled eggs with a homemade honey mustard dressing with grated Vidalia onions. And a glass of cold iced tea.

  1. I really love your blog! I just found you and am enjoying visiting. We eat onions everyday ourselves. I got a little carried away and planted 600 onion sets this year. I'll be looking for ways to preserve these as the season progresses. You made me crave stuffed bell peppers. I think I'll make that for dinner soon:)

  2. Whoo hoo! Mama, what a dish to set before the King (or any able body) It all looks delicious. I never thought of stuffing those long peppers. I think stuffed something is a good idea for dinner :o)

  4. It's always wonderful when those vidalia onions are for sale each year. They have a flavor all their own. Wish I could have been there for supper with you guys; it looked delicious!!!

    I have a friend in Georgia who is allowed to gather the injured onions that are not marketable after they harvest. She gave me a huge bunch. The farmers just let the cows eat what is left after they harvest.
