It was time for a new round of Make Ahead Meals. The cool weather crops continue to come in in my own garden. Today it is peas.
And from the local Amish farm stand I find tomatoes and cucumbers from their greenhouse along with fresh squash and broccoli. A quick trip to the neighborhood market for some carrots and mushrooms and let's get started.
Some chicken pieces from the freezer along with a small pork loin roast.
And a frozen stir fry. I buy 5 pound bags of stir fry and add things to them such as bok choy, kale, peppers and mushrooms then refreeze in sizes for my family.
Oven roasted broccoli and carrots
My souped up stir fry
Homemade fried rice with my home grown peas, green onions and farm eggs
A pot of baked beans
O Wise One got the grill started and grilled some summer squash with olive oil and sea salt
To go with barbecued chicken
And don't forget that little loin roast thrown on the grill.
I also chopped up the tomatoes and cucumbers with a little onion. Added some sea salt and stuck it in the fridge as a cold salad. And there you have it another 4 or 5 days of food. Most locally grown either out of my own garden or a garden less than 10 minutes away. Homemade food in my fridge ready to eat while we go about our daily routines. Hickery Holler fast food! Just some ideas for those of you that want to give it a try.
