Counting One's Blessings



Such a busy time of year for us. Phineus the big yellow tom cat is just wore out. Never let a table full of warm jars go to waste. A little afternoon nap with an automatic bed warmer is always in order.


This time of year is always humbling to me but especially this particular year. A year of shortages and hunger in so much of the world. A year of sickness and death. Yet here we are surrounded by such blessings. Good health and food so plentiful.Tomatoes hanging heavy on the vines. Beans, squash, okra, cucumbers, melons. Eggs in the hen house. Far too much to name. Herbs and vegetables and fruit galore. Ripening in the sun.

Red beans and green beans canned, fermenting dill pickles, hen eggs drying and a warm stuffed pepper casserole.

Frozen okra to be vacuum bagged.


We rarely leave the place anymore as the turmoil and sickness in the outside world increases. We continue to put away as much food as we can unsure of what times lay ahead. We are so fortunate in that our bills are paid, our health is good, our table is overflowing and we have each other.

With every jar of food we can we are thankful for the health to produce and preserve it. May you all be equally blessed!

  1. Our gardens haven't done as well , first drought and high heat now cool and rainy . but every bite counts as Daddy used to say.

  2. Beautiful post! Everything looks picture perfect! The bounty you have is a testament to the hard work y'all put into it. Some days you surely must be pooped!

    Unfortunately, I've had to go back to the office to work (I have been working from home which allowed lots more flexibility and saved me two hours in commute time) but am still going to try to get some things canned. We went to our storage unit to see if our canner survived the fire (it was in the basement) but didn't see it. Bummer! Finding a new one was a little tricky but I finally found one at a Walmart in the city where I work. I drove out there at a weird time of day (to avoid crowds) and snatched one up. I figure I can use the pressure canner as a pressure canner or as a water bath canner, so that's what I got. We don't have much space right now but these days, a canner seems like a pretty good thing to have around! I haven't ever tried canning potatoes but yours look yummy and that is at least something Doug will eat that we can put up ourselves. I planted some in a grow bag this year. We'll see if I get any. Have you ever canned sweet potatoes? I have some of those growing in a grow bag as well.

    I tried your homemade hamburger bun recipe the other day and served them with smoked pork turned into BBQ pulled pork using a homemade BBQ sauce recipe that we love. We absolutely were crazy about the buns w/ that pork. I look forward to making them again. I was surprised that I even got them to look like buns instead of homemade rolls. LOL. I'm eating the last bun today (from the freezer) toasted with some pimento cheese. So good with a big homegrown tomato!

    Did I see that you grind your own flour? If so, what source do you use for wheat for grinding? As things become more unpredictable, it makes me want to stock up on things I can do myself to eliminate processing as much as possible.

    1. Good morning Gina!Glad you found another pressure canner. They are pretty handy! Yes I have canned sweet potato and also dehydrated sweet potatoes shredded. Also froze mashed sweet potato. Glad the buns were enjoyed. I have wheat and a grinder stored and occasionally grind my own if necessary.

  4. Our garden here in NC hasn't done very well due to the hot temperatures and awful humidity. We are thankful for what we have produced and like you rarely venture out anywhere unless absolutely necessary. I love the picture of Phineus. He reminds me of my ginger tomcat Henry who also loves to find a good afternoon nap spot. :) Have a blessed day.

  5. Our homes are our sanctuary from the world and all the craziness going on now. I'm so thankful and blessed to be home most of the time. We babysit grandkids three days a week and I look forward to the other days I can just be "home". Our garden is doing very well for it's first year. I am blessed in many ways and am loving going to the garden to see what I can pick and eat today! Life is good!
