Tuesday Morning Woes



Well we knew it was coming! They are forecasting 30 degree temperatures in Kansas City this coming weekend. We are about 2 hours north of there so we usually expect even colder temperatures here. With a possible frost looming the scramble is on. All that food coming in the back door has to be processed. Lots of washing, peeling and chopping going on in my kitchen. Potatoes were in and out of the pressure cooker all day. 


Apples put through the peeler and then chopped into quarters make perfect sized pieces for the dehydrator. 


Second load of apples for the week in the dehydrator. 


Okra seeds gathered before they can open and spill their valuable contents all over the garden. 


Four trays of chopped peppers in the freezer awaiting being vacuum bagged.


Supper presented itself through the back door. Bok Choy fresh from the garden. 


Supper of stir fry with chicken strips, Bok Choy, fresh onions, fresh peppers, fresh peas. The only thing not fresh or home grown in this dish is the mushrooms and the sauce.  


Add some homemade fried rice and you have a meal with enough left over for lunch the next day. 


By the end of the day O Wise One and I are exhausted but Oh what we have accomplished this day. 


We were in bed before 9:00 p.m. bone tired and as we snuggle off to sleep what do we hear in the distance. PING! Another jar down and another day on the farm. 

By the end of the week I will be ready to nail that back door shut!

  2. After reading yesterdays post and now todays post, I can only dream of producing our food the way that you do. We are a MUCH smaller scale than you. Oh and your stir fry looks delicious!

    you and wise one better watch out, or before you know it, we will all pop over to join you for that stir fry....(oh if only we could do a Mary Poppins pop in, from around the world....grin)...

  5. Your dinner looks great. Isn't it amazing how easy it is to make fried rice? I wish I had know years ago.

    I have an odd question: My guy planted some "stuff" and didn't write down what it was. We now have very large green something or other. Do you know of a site where I could look at pictures to maybe identify what we have grown? It's not kale nor chard nor broccoli rabe ... it's just very big!

  6. Oh but the joy that ping brings;-) You and the O Wise One should have plenty of rest this winter, as I have heard we are in for a cold one. We here in SO.CA have had some nights in the 40s already.

  8. Thought I'd let you know that your link to Apple Chips in your Recipes section takes you to Roasted Red Peppers intead of Apple Chips... ;)

    Do you spritz the apples with lemon before dehydrating?

    1. Yes I spritz with lemon juice and if I am miking chips to eat I dust with cinnamon and sugar.

  9. Oh my, you mentioning going to sleep listening to the "ping" sound of your lids reminds me of a very bazaar happening to the lids on a batch of chicken stock I recently made. My lids started popping up and down over and over. It was like nothing I had ever seen so I grabbed my camera and recorded it. If you have time please check out the video and let me know if this has ever happened to you. My mom said she has never seen anything like this in all her years of canning.
