Banana Nut Bread


We have not eaten the bananas fast enough and they have turned dark so I know it is time to make banana bread. Thought I would share my old standby recipe.

Banana Nut Bread


1 3/4 cup all purpose flour
1 1/2 cups sugar
1 tsp baking soda
1/2 tsp salt
2 eggs
1 cup mashed ripe bananas
1/2 cup vegetable oil
1/4 cup plus one Tablespoon buttermilk
1 teaspoon vanilla
1 cup chopped walnuts or pecans

In a large bowl, stir together flour, sugar, baking soda and salt. In another bowl combine eggs, bananas, oil, buttermilk and vanilla. Add to flour mixture, stirring just until moistened. Fold in nuts. Pour into a greased loaf pan. Bake at 325 for 1 hour and 20 minutes or until bread tests done. Cool for 10 minutes on rack before removing from pans. Return to wire rack to finish cooling.

( Hint: I add 1 box of instant banana pudding to my banana bread recipe. It increases the banana flavor)
