Stuffed Banana Peppers

Stuffed Banana Peppers

Stuffing
1 egg
1 tsp salt
1/4 tsp pepper
1 tsp Worcestershire sauce
1/2 cup grated parmesan cheese
1 pound Italian sausage
1 pound Ground beef
1 1/2 cups bread crumbs
1 cup tomato sauce

Mix all above ingredients well. Wash 12 large banana peppers then cut tops off, then remove seeds and hollow. I cook cleaned peppers in microwave on high for 2 minutes then cool. Or you can boil peppers in boiling salted water for 5 minutes until tender but still firm.  With a jerky shooter I shoot the meat mixture into the peppers and then freeze on cookie sheets and put in bags in freezer for later use.

Marinara Sauce

1/2 cup chopped bell or banana pepper
2 Tblsp butter
1/2 cup chopped onion
1/2 cup chopped celery
1 can crushed tomatoes (28 oz)
1 can tomato sauce ( 8 oz)
2 cloves garlic
1 tsp dried basil
1 tsp dried oregano
salt and pepper to taste

Heat butter ina medium skillet.
Saute chopped pepper, onion and celery until tender. Approximately 3 to 5 minutes.
Stir in crushed tomatoes and tomato sauce and garlic.
Season with basil, oregano, salt and pepper.
Simmer uncovered for 10 minutes to reduce.

Defrost frozen peppers and place in 9 X 13 inch baking pan. Pour sace over top of peppers and bake uncovered in a preheated 350 degree oven for 1 hour or until meat stuffing is done. The last 10 minutes of baking I sprinkle a small amount of Mazarella or Parmesan cheese over the top to melt.
