Broccoli Harvest






Again with the return of hot summer temperatures it is time to harvest all those cool season veggies still left in the garden. Broccoli must be harvested before it opens to flower. You want the heads good and tight and therefore must watch it closely because the hot temperatures will cause it to open quickly. Once harvested I soak my heads in cold water and salt for at least 30 minutes to kill any worms that may be hiding in there. Then I trim and cut up my heads into florets and put them in 9 X 13 microwave safe dishes covered with plastic wrap and microwave for at least 2 1/2 minutes to prepare them for freezing.



Then the florets are put on cookie sheets and quick frozen overnight. 
  



Once frozen they are bagged either in Ziploc bags or vacuum seal freezer bags and returned to the freezer ready to go into stir fries and casseroles or just cooked plain with a little butter and salt.

  1. This is wonderful. We do not have very good luck with broccli, the bugs are too bad.
