Dehydrated Sweet Potato Hash Browns


With lots of sweet potatoes still left in the pantry and spring upon us I decided it was time to get creative. Soon it will be time to start my new sweet potato slips for this year but I still need to do something with the potatoes left over. I already have sweet potato canned in jars so I decided to shred and dehydrate them in an attempt to have sweet potatoes shredded to throw into my favorite muffin recipes and such. They could also be used in casseroles. 


First wash......



Then peel......


shred.......


Blanch 3 minutes then run cool water over to cool. Then I placed them to soak in cold water and 3 tablespoons lemon juice for about 15 minutes. Then drain well......


Lay out on trays and dehydrate until crisp. 


Cool, place in jars and seal either with oxygen absorbers or vacuum sealer attachment.


Don't forget to save a few to sprout for this years June planting!

  2. Those are beautiful.. great job & idea.. Enjoyed your post..

    Last fall, I steamed up a bunch of sweet potatoes, winter squash, and pumpkins and dehydrated the puree.. and then pulverized it. It worked great.. Now when i want to make a pie or thicken something, I've got pureed good stuff to add to it.. jut give it a quick reconstitution and you cant tell it was ever dehydrated.. I made a pumpkin pie at Christmas from it to test it out.

  3. Hi I have a question that's a little off topic, asparagus. I just looked up your "how to" on freezing, but also noticed you dehydrated some also. Which preservation method did you like better? Thank you

    1. Frozen asparagus is the closest to fresh and my preferred method. Dehydrated asparagus is great for that asparagus soup and such. Canned asparagus tastes closest to what you buy in the store in cans but tends to be a little soft. This year I got a suggestion to add pickle crisp and am going to try that to help make it crisper.

    1. Sweet potatoes love heat. In Oregon that may be a challenge. Try laying black plastic on your rows and a row cover early may help.

    2. Ah.. This is sad news.. the last 2 years have been so cool here most things have not grown well, Our nights never got warm last year
      .. We are having a early spring right now.. but likely no hot weather until after the first week of July
