Pork Tenderloin and Canadian Bacon


O Wise One caught pork tenderloin on sale at our local farm store. We have a local store that stocks all locally produced meats, produce, honey and fresh milk. Most organic and all direct from local farms.  He bought a large loin and trimmed it into tenderloin steaks for the freezer.



This was done by simply trimming it up and slicing off the steaks.




Years ago he bought this hand crank meat tenderizer that works great on our small venison steaks and equally as well on these small tenderloins. 



The red plastic cover is simply a guard to protect slow fingers.



The small steaks are simply fed into the tenderizer as the handle is turned with the meat coming out the bottom. 



And there you have it tenderloin ready for breaded tenderloin sandwiches. 




Some are tenderized for sandwiches and some are simply frozen for small steaks in the crockpot.


The remainder of the loin is marinading in a buckboard bacon brine in the refrigerator for canadian bacon to go in the smoker. This will be for eating not only on biscuits this winter but also on those homemade pizzas. 

Tomorrow I'll show you what we did with any trimmings.

  4. I want to thank you and O'Wise One for all the hard work you do. And your willingness to blog about it. I always learn something new here. I saw a huge piece of pork loin like your photo at the market recently. All I could think of was who needs that much. Next time, I will buy it and have the Mr. cut it into steaks. Talk about a duh moment;-)
