Crockpot Sweet Potatoes and Ham

Yesterday was such a busy day of canning that I knew I needed an easy meal for when the end of the canning day rolled around. Believe me when I say that when you spend 8 hours standing on your feet peeling, chopping and canning the last thing you want to do is cook a meal. On these day I love a meal that I can throw in the crockpot and at the end of the day have a meal ready to go with very little effort.

So I took 4 sweet potatoes and washed them well and rolled each in aluminum foil.

Then I placed all 4 wrapped potatoes in the crockpot on low for about 4 hours.

Out of the freezer I had removed a package of leftover cooked ham slices from that Easter ham that we had frozen in foodsaver bags. I had allowed the slices to thaw all morning. Just enough for a nice meal for 3 people. If you don't have some ham laying around in your freezer a supermarket ham steak would work just fine.

Then I laid the ham on a large piece pf aluminum foil just like the potatoes. I drizzled the ham with honey.

On top of the honey I drizzled Heinz 57 sauce.

On top of the Heinz 57 sauce I sprinkled about a Tablespoon of brown sugar.

Sprinkles some raisins on top of that.

Now fold your foil over and seal.

Now place your pouch of ham on top of the sweet potatoes and allow to cook for an additional 2 hours on low just to reheat the ham. Remember it has is already been cooked.

And at the end of a long day we had a wonderful dinner of baked sweet potatoes homegrown in our garden.

And thick slices of  homegrown smoked ham with a wonderful honey and raisin sauce. You would have never guessed it was leftovers from Easter.

And best of all no pots to clean. Just wipe out the crockpot and rinse the foil and place in the recycle bin.

  4. Incredible! You're so creative! Now, for baking the potatoes, and warming the ham, did you use the lid or did you keep the crock pot open?

  5. Yum! We make ham steaks often. I never thought to use Heinz 57 on them!
I have been saving my used foil to wrap around squash and zucchini plants -- it's supposed to help deter the pests that bore into the stems. That's been an issue for me the past couple of years.
