A Canning Extravaganza !

Yesterday was a busy day!  Indeed  I was busier than a pair of jumper cables at a redneck picnic! Ya might say I had a canning extravaganza. It started with 3 pounds of beef shanks cut up and browned in the oven to braise and remove the fat.


Then added to a pot of water with onions, carrots and celery to make beef broth. Then cooked for hours over a low heat to get all that beefy goodness.

Then strained and put into jars and pressure cooked. The final result is quarts of rich and hearty beef stock. The meat was then put into a separate pot with a reserved portion of the broth and the carrots and onions and reheated and noodles added for supper along with baked sweet potatoes and rolls.  




Then I bottled 7 quarts of watermelon wine. It will have to age for atleast 6 months and then we shall see how it turns out. Maybe I shall have a hooch tastin ....


Then I processed 2 pumpkins. One was baked in the oven and put into freezer containers.




The other pumpkin was peeled and cubed and processed in the pressure cooker.

The seeds were saved and rinsed and roasted  with butter and salt for snacking

And the remainder of those carrots bought on sale last week were dehydrated.


A busy but productive day. Today I am not canning anything! My feet are tired : )

    I don't blame you for not canning today, you were definitely busy!
    One thing I was wondering about the pumpkin seeds, do you crack them like sunflower seeds when you eat them, or do you eat them whole?
    I know, I'm that clueless. Happy Wednesday! :)

  2. You've been one busy girl! That beef stock looked really good; the stuff you buy at the grocery store doesn't have much taste. You deserve a break!
