Pickled Pullet Eggs

Remember those fuzzy yellow chicks from the Spring. Well most of the roosters are now in my freezer or in jars. The 20 youngs hens or pullets are now in the chicken yard with the older hens and are starting to lay pullet eggs. These eggs are 1/2 to 1/3 the size of regular eggs and we have 20 pullets. So needless to say we are getting about 18 pullet eggs a day now along with the regular size chicken eggs. Now we do sell the regular size eggs to the neighbors but eat the pullet eggs ourselves. So with plenty pullet eggs O Wise One and I decide to pickle some.

Pickled Pullet Eggs

2 dozen hard boiled eggs ( 4 dozen pullet)
2 Tblsp sea salt or pickling salt
1 Tblsp mustard seed
1 Tblsp celery seed
1 Tblsp pickling spice
4-7 fresh chili peppers
4-6 cloves fresh garlic
1 white onion
2 vidalia onions
3 cups white vinegar
1 cup cider vinegar
1 cup water

Slice Onions and Garlic. Dice 1 chili pepper and put in saucepan. Add the white vinegar, cider vinegar, water, salt, celery seed, mustard seed and pickling spice in the sauce pan and bring to a boil.

Put peeled hard boiled eggs, sliced onions, sliced garlic and remaining uncut chili peppers in hot glass jars. Pour in boiling sauce and put lids on immediately. If sauce doesn't fill jars top off with hot white vinegar.  I then hot bath for 15 minutes and cool to seal.

  2. How do you get your eggs to peal so cleanly? I find that my "fresh" farm eggs don't always peal well when I boil them. Now those from the store a ways peal well. I think it's a difference in freshness. What's your secret for pealing the farm eggs?

    1. a lady I know just told me a trick take safety pin put small hole in small end of eggs and boil don't worry try and you will be amazed boil and peel away

  4. How long will these eggs keep? No refrigeration?

  5. Our pullets are just starting to lay so getting smaller eggs. I would love to surprise hubby with these! Could we do this with no onions as well? Could we just use regular pickling spices from the package? I don't make regular pickles but have plenty of seasoning lol. Do you use Qt jars for this? Id like to get a full batch of 7 jars. It looks like hot water bath canning; how come we wouldnt use pressure canner since its meat?? Thank you (I'd love to make this for this week)

    1. I would love to know as well about the package since it has all the seasonings in it already. I have pullets and have tons of eggs already and also sell some and would love to try this recipe. Thank you. Lillian
