It was time for a new round of Make Ahead Meals. The cool weather crops continue to come in in my own garden. Today it is peas.
And from the local Amish farm stand I find tomatoes and cucumbers from their greenhouse along with fresh squash and broccoli. A quick trip to the neighborhood market for some carrots and mushrooms and let's get started.
Some chicken pieces from the freezer along with a small pork loin roast.
And a frozen stir fry. I buy 5 pound bags of stir fry and add things to them such as bok choy, kale, peppers and mushrooms then refreeze in sizes for my family.
Oven roasted broccoli and carrots
My souped up stir fry
Homemade fried rice with my home grown peas, green onions and farm eggs
A pot of baked beans
O Wise One got the grill started and grilled some summer squash with olive oil and sea salt
To go with barbecued chicken
And don't forget that little loin roast thrown on the grill.
I also chopped up the tomatoes and cucumbers with a little onion. Added some sea salt and stuck it in the fridge as a cold salad. And there you have it another 4 or 5 days of food. Most locally grown either out of my own garden or a garden less than 10 minutes away. Homemade food in my fridge ready to eat while we go about our daily routines. Hickery Holler fast food! Just some ideas for those of you that want to give it a try.

thank you for week 2 so many great ideas,I keep them in containers rather than portioning out as sometimes we have visitors for din din...lol
ReplyDeleteThat all sure looks good! I'm finishing a graduation quilt and with meals like these, I can stitch longer and feed the Garden Guy a good meal every day! He is also my master griller! Thanks for the ideas.
ReplyDeleteEverything looks great!
ReplyDeleteI want to try oven roasted broccoli. 🙂
Do you just store these in the fridge? I keep saying im going to do this and I even bought containers. I generally just cook extra of whatever our meal is and freeze some. One huge lasagna makes 4 meals for us so I freeze 3 portions of it. Same with meatloaf. I make 3 or 4 at a time. Several dozen meatballs too. It means on hectic days I at least have an entree I can grab. We keep salad makings handy and often I'll make several salads and store in quart jars in the fridge. They stay fresh for a whole week! I confess though that even with the entrees handy the sides throw me off because I don't want to cook something, and we will order takeout sometimes as a result, lol.
ReplyDeleteI look forward to your posts every day. I love them all.
ReplyDeleteOh my gosh, you are making me so hungry! It all looks good and I appreciate the ideas.
