Oven Roasting Tomatoes


We all love those little tomatoes. Plum, cherry, grape and pear tomatoes. Great for salads and my kids walk around with pockets of them half of the summer. The problem is that they make TONS of those little gems. My daughter Fred loves sun dried tomatoes so I am trying a new skill. For the first time this year I am trying to dry tomatoes in the oven. Those little tomatoes are the perfect ones for me to do this with.  




I just cut them in half and put the halves in a bowl and drizzled them with olive oil. The sprinkled on some of my favorite Italian herbs. Basil and oregano on these with a little garlic powder. Then spread them on a cookie sheet greased with olive oil.




Then I put them in a 200 degree oven for 1 hour. I think the next ones took an extra 30 minutes. The time will depend on the size of the tomato and how much moisture is in it. I dried them until they were chewy in the middle and a little dry around the outside. Almost caramelized. 

I would take a picture of the finished product except they keep walking away behind my back. If I ever manage to get any for myself the plan was to put them in plastic bags and freeze them. I'll have lots of opportunities though because there are still plenty out there hanging on those vines. They can be eaten as snacks or used in cooking pasta sauces or anything that requires tomatoes.

  1. Bookmarking this page. Thanks for the tip, CQ! I've done tons of jerky in the oven over the years, but never tried drying my own veggies.

    I like the sweet cherry grape tomatoes. The little ones. I need to try and grow a bigger variety next year, I think. Since I am not a big tomato eater, both literally and figuratively, maybe I'll try a couple different varieties of the little ones.

    Which my hubby doesn't like.

    Oh well. He is a random tomato eater at best, so I think I win this one. ;-)

  2. This is a really good idea! All of our tomatos are setting fruit again, and though they are still green, I think we are going to get a second flush if we don't get a freeze soon.

  3. I am glad to see you dried them with the seeds. Everything I read says to remove the pulp and seeds in order to dry tomatoes. I was balking at that!
