Remember those potatoes we planted on St. Patrick's Day. I don't think we lost a plant. And now we have about 246 pounds of potatoes.

We have dug a few through the summer to eat. And we can't forget the new potatoes we snuck out and put in jars. And the ones we dehydrated as hash browns. Indeed the potato harvest is declared a success!

  1. How wonderful for you! I would love to grow potatoes like that.

  2. Awesome! Can you explain how you do your hash browns? I know it's probably self explanatory, but sliced potatoes turn brown, right?
Or is that not a problem with hash browns?

Did you grow potatoes in Louisiana? How do you store them down there? Just in a basket in the pantry? Sorry for all the questions. I think all your potatoes look amazing!
