Baby O is on the school newspaper and brought this recipe home to try for consideration on publishing in the school paper. She and I baked these together and proclaimed them a hit. Fred came through that afternnon and ate several and she generally doesn't like pumkin that much : ) With LOTS of pumpkin this year thanks to the "Great Pumpkin" Vine we are going to have these regularly I think. Anyone else have some good pumpkin recipes out there!
PUMPKIN CHOCOLATE CHIP MUFFINS
4 eggs
2 cups sugar
1 can 16 oz pumpkin
3/4 cup vegetable oil
1/2 cup apple sauce
3 cups all purpose flour
2 tsp. baking soda
2 tsp baking powder
1 tsp ground cinnamon
1 tsp salt
2 cups (12 oz.) semisweet chocolate chips
In a large mixing bowl beat eggs, sugar, pumpkin, oil and apple sauce until smooth. Combine flour, baking soda, baking powder, cinnamon and salt; add to pumpkin mixture and mix well. Fold in chocolate chips and fill greased muffin pans 3/4ths full. Bake at 400 fo 16 to 20 minutes or until muffins test done. Cool in pan 10 minutes before removing to wire rack. Yield 24 standard size muffins.
(We added pecans to the tops of a couple, Think next time we may drizzle a little cream cheese glaze over them also. )

Yummy! The walnuts on top look delicious! We have a favorite pumpkin bar recipe with cream cheese frosting that we make alot using pumpkins or squash from the garden. There's also the cream cheese pumpkin pie that is a Thanksgiving favorite. Mmmmm~mmmmmm! Good stuff!
