Non Stick Baking

I like to bake! My mother was an excellent baker and I seem to have continued in that tradition of baking from scratch. I no longer buy the sprays to prevent sticking. I cannot justify paying the price for those little cans on nonstick spray. Instead I bought a spray bottled made specifically for oil. I found mine on EBay and paid $8 for it. The main ingredients in the sprays are oil and in the case above olive oil and soy lecithin which is the non stick agent. I buy my lecithin from the Amish but you can also purchase online or in health food stores. My bottle cost me $4.89 and will make many cans of spray.

In a glass measuring cup I mix 2 parts oil to 1 part lecithin. In my case 1/2 cup oil to 1/4 cup lecithin. Mix well and pour into spray bottle. My spray bottle is a pump bottle therefore it must be pumped before each spray. I use it when I oven bake fish or oven bake breaded okra or squash. Once they are breaded I spray a fine mist of olive oil spray over to help moisten the breading and assist in browning and crispiness.  However mix small amounts at a time because it can spoil over time. Also the cleanup as with the cooking sprays can sometimes be difficult. To clean pans I wash with a paste of baking soda and Dawn in hot water. It will cut it no problem.

For Baking I use this Non Stick coating applied to my cake pans, muffin tins etc. It is cheap and works wonderfully. I apply it with a pastry brush and it cleans easily.

Non Stick Coating

1/2 cup liquid vegetable oil
1/2 cup solid vegetable shortening
1/2 cup flour

Add all three above ingredients together and beat until it becomes white and fluffy.  Store in an airtight container until ready to use. Brush onto your baking pan with a  pastry or silicone brush prior to filling pans. Bake as usual.

I baked bread using this coating!

Just paint it on the bread pan

And bake as usual! See the bread came out leaving a clean pan....
