Morning Glory Muffins

This recipe was requested by LynnS recently. There are many variations of this recipe floating around the net. This is the one I use. However I must say I have sustituted everything but the kitchen sink in this recipe. Try using zucchini instead of the shredded carrots or even yellow squash if you have lots. I have even thrown in a 1/2 cup of oatmeal. I have used not only walnuts but pecans and even almond slivers. Try it with cranraisins for the raisins.  It all depends on what I have in the pantry! Morning Glory Muffins

2 cups all purpose flour                         1/2 cup chopped walnuts
1 1/4 cups white sugar                            1/2 cup unsweetened flaked coconut
2 tsp baking soda                                   1 apple shredded
2 tsp ground cinnamon                            3 eggs 
1/4 tsp salt                                           1 cup vegetable oil
2 cups shredded carrots                         2 tsp vanilla extract
1/2 cup raisins

Preheat oven to 350. Grease or spray 12 muffin cups. In a large bowl, mix together flour sugar, baking soda, cinnamon and salt. Stir in carrots, raisins, nuts coconut and apple. In a separate bowl, beat together eggs, oil and vanilla. Stir egg mixture into the carrot/flour mixture just until moistened. Scoop batter into prepared muffin cups. Bake in preheated oven for 20 minutes or until toothpick comes out clean.
