Pie




Yesterday morning I got up to 30 mile an hour winds, cold and rainy. The day before it was 80 and I'm nursing a mild sunburn and trying to wear a sweater. Grrrr! Mother nature is driving me nuts and I so wish she would just make up her mind already. I am so over this one day it's hot and the next day it's cold garbage. This year is the worst i have ever seen.  Okay the rant is over and back to the pie.....

 There's nothing better on a cool drizzly morning than the smell of apple pie baking. All that cinnamon and apple goodness just makes you feel good smelling it. 


My apple pie of choice is my apple pie in a bag that I make and freeze. It is just as simple as taking it out of the freezer and letting it thaw for an hour or so.  


Then add it to your favorite pie crust recipe  


Cover with your second crust. Brush on a little milk and egg white whipped together. Then sprinkle a little brown sugar over the top and vent. Then Bake! 


I took the left over pie crust dough and rolled it out and brushed it with the left over egg white and milk. Then sprinkled sugar and cinnamon over the top and baked until brown and flaky. I remember my mother doing this when I was a little girl. Baby O was waiting on these when they came out of the oven.  Just a little treat to carry her over till the real pie was cooled. Great with a cold glass of milk.



We could hardly wait for supper.

Sure hoping for a bumper apple crop this year to replenish my pie in a bag stock in the freezer. Works great with peaches too.

  1. You make a beautiful pie and I have no doubt it tastes just a lovely. Your idea to make and freeze a the apple mix is great. I cannot get organic apples here but, this could work with mangoes and gluten free flour. You've gone and made me hungry.

    Great idea, have everything ready with the fruit and freeze it! I know what I will be doing the next couple of weeks, thanks.

I am definitely going to have a look at your "pie in a bag" recipe, we do a lot of apple picking in the fall and this year my cousin and I got together to make apple pies to freeze, but I think I'd prefer thawing the filling and making the pastry when I want the pie. Your use of the pie pastry scraps is awesome! I can't wait to try it. Our weather is just the same. We broke a major record with a 25C day in late March, but today it is 3 degrees, freezing, gale-force winds, with flurries in the air. I am getting pretty darn tired of it myself! I made beef stew, spaghetti sauce, and the meat filling for shepherd's pie today. All such wintry foods!
