Green tomato recipes

Jack Frost has paid you a visit and now you have green tomatoes lying around. You can wrap them in newspaper and store them in the basement waiting for them to ripen and eat on them for the next few weeks or maybe month or so. Been a cool year and have too many for even that. Try these older recipes all using those green tomatoes.  



Chow Chow (Green Tomato Relish)


1 medium head cabbage, chopped
6 medium onions chopped
6 green peppers chopped
6 sweet red peppers chopped
1 1/2 lbs. green tomatoes chopped
1/4 cup pickling salt
2 Tblsp prepared mustard
1 1/2 quarts vinegar
2 1/2 cups sugar
1 1/2 tsp tumeric
1 1/2 tsp ground ginger
2 Tbsp mustard seed
1 Tbsp celery salt
1 Tbsp mixed whole pickling spice


Mix all chopped vegetables together and add pickling salt. Mix well. Cover; let stand overnight. Drain.
In kettle mix mustard with small amount vinegar. Mix well. Add remaining vinegar sugar and spices. Simmer 20 minutes. Add vegetables then simmer 10 minutes. Continue on low simmer while quickly packing in hot sterile jars.
Fill to within 1/2 inch from top. Be sure liquid covers vegetables. Seal jars and hot water bath for 10 minutes.
Yield 7 pints.  




Green Tomato Mincemeat

1 1/2 pints tart apples, peeled and chopped
1 pt ground green tomatoes
1 tsp salt
1 tsp cloves
1/4 cup vinegar
1 cup suet
2 tsp cinnamon
1 tsp allspice
3 cups sugar
1 lb. raisins

Mix all ingredients together, Bring to a rapid boil and simmer until thick. Pour into sterilized jars and seal . Hot water bath 10 minutes in hot water bath canner.  TO freeze: Let cool and pack in freezer containers.

Yield 5 pints.

Green Tomato Jam
Cook Green tomatoes until soft. Run through sieve and save pulp.


1 cup tomato pulp
2 cups sugar
Cook until reduced by half. 
Add 1 stick cinnamon and 1 lemon slice to a cup of pulp.
Cook a little longer to get that lemon flavor.
Put in sterilized jars and seal.

This recipe came from an old German Cook Book dating to turn of the century.

  6. We've got lots of green tomatoes...ours are still on the vine. Hoping they stay that way for a bit...I'd love to have them ripen.

    I'm going to bookmark these recipes...just in case. {smile}

  9. I sure hope this chow-chow is like my mother in law used to make. I love that stuff on soup beans; in fact it is the only way I really learned to LIKE soup beans! Some jars she would tuck a hot pepper in to for extra spice. Those were my favorite.
