Chocolate Cake For 2



Well it has come to that time in our lives that many nights there are just O Wise One and I . Baby O, now a busy teenager seems to gradually spend more time away with other obligations. Clubs, youth at church and other organizations still manage to keep her life pretty busy. We are to the point that a large cake either ends up going to waste or I end up taking half and giving it to neighbors or my grown kids. This recipe for 2 chocolate cake has become a favorite. Microwaved in a mug in 3 minutes it is wonderful plain or with a dollop of whipped cream it definitely satisfies that sweet urge with minimal cleanup and leftovers.    


Chocolate Cake for 2

1 Large coffee mug
4 Tablespoons all purpose flour
4 Tablespoons sugar
2 Tablespoons baking cocoa
1 egg
3 Tablespoons milk
3 Tablespoons oil
3 Tablespoons chocolate chips
Small splash of vanilla



In a large coffee mug combine flour, sugar, cocoa


Add egg and mix well





Add milk and oil and mix well


Add chocolate chips and vanilla and mix well



Put mug in microwave and cook for 3 minutes

(cake will rise over top of mug, it is okay) 



Allow to cool and turn over on plate. Serve with whipped cream, chocolate syrup and maybe a cherry
