The End Of A Long Week

As summer nears and end and the kids in the area head back to school work continues here on the farm harder than ever. It seems this year with such extreme fluctuations in the weather that most crops on this homestead have decided to ripen all at once. We have spring crops of cabbage and broccoli ripening beside July crops of peaches and grapes. August is usually the month for tomatoes, okra, melons and my blood red peaches. Nights have all of a sudden dropped into the 50's and daytime temperatures in the 80's. As a result these crops all seem to be languishing in the fields. We however have no shortage of crops to preserve right now. It seems as if God always provides if we are patient and work hard enough.  I'm going to run through this weeks canning tally and call it a night. 


34 quarts whole kernel corn frozen



7 quarts grape juice canned 



3 quarts frozen breaded okra


5 pints pineapple zucchini canned


4 more quarts refrigerator pickles
YES my grandchildren have consumed them!


2 pints dried basil and 1/2 pint dried oregano


5 gallon bags frozen corn on the cob




14 bags freezer slaw frozen


6 bags frozen squash slices and 3 bags zucchini slices


2 quarts frozen red beans


6 quarts frozen broccoli florets


12 bags of frozen rabbit pieces and 2 bags of loin fillets frozen 


2 quarts frozen blackberries


And as I type this I have green onions still in the dehydrator cooling down to bag tonight 


And a pot of blanched corn on the cob to cut off the cob yet tonight. Then I am done until Monday morning! 

Tomorrow I am taking all day off. I am sitting in my recliner and I am not answering the door or the phone. I am going to relax and not can anything. Instead I will spend the day thanking God for my good fortune and resting. Well I am off to finish my corn.

  5. I look forward to your every post and use your "how to" section often. We love slaw but I have never heard of freezer slaw until your blog. I suppose the only way I will know if it is still wonderful after freezing and thawing is to make up a batch and freeze it. Many thanks for sharing your skills.

  6. You made my day by encouraging me to plant more for fall and for winter (we are in zone 7) so that I can have more veggies to put by instead of just fresh eating. Next summer I certainly will be ready! You truly a blessing to me (many others as well)! Thank you for your example and the sharing spirit in which you share you life and what you produce with us!

  7. I so enjoy your posts. You are so blessed to be able to put up so much food. We just have way too much shade to have a decent garden. Guess we should make ourselves a major pile of fire wood at some point and maybe next year I could have something more than an herb garden. Today was pot luck Sunday at Church so after we cleaned up I came home and started weeding my Iris bed. Not edible, but certainly beautiful in the spring. Your post 2 weeks ago was very touching. I'm so glad you say what you feel. Too many yet with their heads in the sand. Until next year, I will continue to buy fresh produce any where we can find it, freeze it or dehydrate it for winter.

  8. I love watching what you are doing every week! What an inspiration! I've been doing better this year than ever with canning and preserving (now that my youngest is 1-1/2 years old and plays well with her 3 big brothers), but am nothing up next to you! haha

  10. I so enjoy reading your blog, not the least because my Moms family all live in northeast MO. Last weekend my 100 year old grandmother, 78 year old mother and 75 year old aunt froze 201 quarts of corn! So your blog feels like something one of my cousins would be doing or writing. You just feel like family. Thanks for all you share!
