Right now I have lots of eggs in my refrigerator! Lately I have seen several different postings and recipes for this pie. It uses lots of eggs, makes it's own crust and to me tastes similar to a coconut custard only a little denser. This recipe has been out there for a long time and when I ran across it I thought I would take advantage of all those eggs. We were not disappointed. Granny Miller's Impossible Pie
IMPOSSIBLE PIE RECIPE
- Preheat oven to 350°F
- In a large bowl combine
4 eggs
2 cups of whole milk
1 cup of white sugar
1/2 cup flour
1/2 cup of melted butter
2 teaspoons of vanilla
1 cup shredded coconut
2 cups of whole milk

- Mix well with a hand beater or electric mixer.
- Pour the liquid mixture into a buttered 10” or larger pie plate or casserole dish and bake for about 45 minutes or until a knife comes clean when inserted into the center.Don’t try to use a smaller pie plate or dish with this recipe, because you’ll be sorry when you’re cleaning the bottom of your oven floor. The “pie” will puff up while it is baking and if the plate isn’t large enough it will spill over the sides.
Remove the pie when done and allow it to cool. I think Impossible Pie tastes best after it has been refrigerated.
So if you have lots of eggs give it a try and see what you think! Some of you younger cooks out there give it a try. I love the way these older recipes come full circle again and again.

Dad loved Chess pie and it used lots of eggs. This looks similar and delicious.

ReplyDeleteIf you need another really tasty recipe that calls for a lot of eggs, give Sad Cake a try.
My great aunt came to my rescue one time when I had 2 little babies, I'd just moved into her town, & I had the flu.. She brought me a gallon of homemade vegetable beef soup & a plate of Sad Cake (chewy blond brownie-like).
4 eggs, beaten
1# (2.5 cups) brown sugar
1 T vanilla
2 cups pancake mix (any including bisquick)
Mix first 3 ingredients together then add pancake mix. Pour into greased 9x13 cake pan & bake @ 325° for 30 minutes. Let cool, cut in squares & enjoy!
Super simple and super yummy! They're addicting so watch out! I like them also with pecans in them.
The Sad Cake will rise up a bit in the pan and then fall flat.. and that is what it is supposed to do. The center will be slightly underdone compared to the edges which will remain thicker. Im not sure if its called Sad Cake because its so ugly or if its because it will make you so happy to eat them when you're feeling sad.. Either way.. its a winner of a recipe & I never met anyone who didnt love them.

DeleteI make a similar Impossible/Miracle using Bisquick. Hubby loves it, and it only take a few minutes to whip one up.

ReplyDelete(Sorry for the deleted comments...can't type today.) Your pie is beautiful. I just love this recipe. I make it for the same reason you do...to use up some eggs! I don't even mind making it in on a hot summer day. I just pop it into my Sun Oven and keep my kitchen cool.
ReplyDeleteLike you I love this recipe but have never tried cooking it in a sun oven. I have cooked it in a box oven with my girl scouts years ago! It amazes me that I see this pie everywhere lately and you know this recipe has been around a long time and seems to be gaining a new life : )

I had mentioned to her about your homemade pie crust recipe and I was going to buy a glass one so she gave hers. can't wait to try the pie crust. Ty again for the recipe. its all gone:)
Well bless your heart! I just gave my own daughter a couple pie dishes several weeks ago myself. I always buy her kitchen stuff because that is what I know. For her birthday I bought her a beautiful new oil lamp and a giant stainless steel bowl. I always try to pick up quality items at antique stores, estate sales and garage sales. Recently I found her a beautiful wooden rolling pin. Glad she likes to cook : )
