With frost a possibility anytime in the near future I have started to strip bushes of all final warm weather crops. One of those is bell peppers. These were the bell peppers planted along the sidewalk in the flowerbeds : )

Yes they are predicting frost on low lying areas I think. We know around this time of year it is just a matter of time. Scrambling to get everything we can picked before : )

How do you use these once they are dehydrated and how long did you put them in for?
ReplyDeleteThese peppers I allowed to ripen and taste similar to pimentos. I dehydrated them until rubbery..how long will depend on the individual pepper variety, thickness of wall flesh etc. In casseroles and such that call for pimentos I simply pour boiling water over them and allow to sit on counter until soft and reconstituted about half an hour. In soups and such I just add them to the pot and they will reconstitute in the boiling soup.
