Roasted Cantaloupe Seeds

My family love toasted pumpkin seeds. With all these cantaloupe I wondered if I couldn't roast these the same way? So I washed and picked out some cantaloupe seeds. Put a couple tablespoons of olive oil in a pan and preheated the oven to 200 degrees.

Then I let these roast until good and toasted and brown. It took over an hour with me stirring every 20 minutes. Then once they were brown and crispy I removed them from the oven and sprinkled with sea salt and a little granulated garlic.

And the family consensus was....great flavor just not a whole lot of meat to the seeds like pumpkin.

Baby O said they reminded her a lot of sunflower seeds(just crunchier and chewier).  She said they are addictive though : ) Seems each time she walks through the kitchen I see her with a handful.

  5. Great idea. There is an Armenian market near us that sells roasted watermelon seeds too. And let me say they are also addictive.

  6. Plant mortality is highest at the seed to seedling stage. Every seed is really a structure that embodies and protects the baby plant or embryo, plus a certain amount of food to tide it over the early stages of germination and growth.
