Baking Bread


Tuesday Evening I mixed up a new bread for my gang to try. It was a wonderfully easy bread to mix that is mixed up the night before and left to rise for 12 to 18 hours then punched down for a second rise and cooked in a dutch oven on very high heat. Wednesday morning we got up to overcast skies and a drizzling rain.  What a perfect day to make bread. The great thing about this bread is that it is no knead requiring very little handling at all actually. With a batter of simply flour, water, salt and yeast it is more of an artisan bread.   

O Wise One loved it but found it rather bland so next time I am going to try adding some cheese and herbs to it. I also think that it is better with a coating of melted butter on the crust and it was better the next day in my opinion. Loved the texture though and that old cast iron dutch oven really did the trick.

The only complaint I had was that this used 6 cups of flour and made a huge loaf : )

I like that this recipe is a 3 cup flour loaf and that she adds cheese, herbs and even whole grain flours to hers.  A smaller loaf is definitely more manageable for my family.

  1. You really cant beat homemade fresh bread and theres also the bonus of the lovely smell wafting around the house :)
    The US drought was reported on our (UK) national news last night, truly looks bad for farmers..& of course how it will impact on the price of our daily bread & other food stuffs.
    Never better time to learn to bake & save a few pennys!

  2. I have a cast iron dutch oven but it is enamel coated. Do you think it will still work for this bread?

  3. My daughter and I made bread and hamburger buns last week. Yum. I read back a few days worth of yours and you mentioned homemade steak sauce, is it a secret recipe or can you share? I would love to be able to make some and maybe put some up for winter. Thanks

  4. I have a few cast iron pans that did not make the move well. They will need scrubbing and seasoning.
    Hmm... I don't have a dutch oven of any sort.

    But I have bookmarked this page and will save it until I can try making it in my cast iron pan with a cast iron lid.
    Do you think that would work, CQ?
