Apple Fritters
2 cups all purpose flour
pinch of salt
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking powder
1 Tablespoon sugar
1 1/4 cups buttermilk
2 eggs, separated
1 1/2 cups finely diced tart apples
Vegetable Oil for Frying
Powdered sugar
Apple Juice
Mix together flour, sugar, baking powder, salt, cinnamon and nutmeg. Set aside
In a small bowl mix together buttermilk and egg yolks and add to flour mixture. Stir just until mixed thoroughly.
Beat egg whites until stiff.
Fold beaten egg whites gently into batter.
Fold in finely diced apples.
Heat oil in heavy pan then drop batter by a tablespoon into hot oil. Cook one side until golden brown then flip over and cook backside until golden.
Remove hot fritters and allow to drain on rack with paper towels beneath.
Now mix powdered sugar and apple juice in a small bowl until it is the consistency of thin icing.
Now dip warm fritter in icing flipping to coat both sides.
Return iced fritter to rack for any excess icing to drain and icing to set.
One very large wooden spoon to guard your fritters from marauding family members long enough to take pictures.
I hid some to enjoy with my morning coffee : )

ReplyDeleteI"m not sure what I did wrong. The fritters fried up great and were crunchy. While hot, I dipped them in the glaze on both sides and let dry on the rack. After they dried though, the crunch was gone. They are very moist but the outsides are as well. They taste like spiced apple cake instead of the crunchy apple fritters I'm used to having. Any suggestions?

I've been wanting these for quite sometime and finally got around to trying them today. I used wheat flour and used 2% milk instead and oh my gosh, they are really good. For those that have diet issues, this is the way to do it. they turned out light and fluffy, not heavy like you find in the bakery.
ReplyDeleteFor the icing/glaze I'll just mixed the powder sugar with 1 tablespoon of water instead of using apple juice because I don't like apple juice
