Chocolate Zucchini Muffins



Chocolate Zucchini Muffins


2 cups sugar
3 eggs
1 cup oil ( I used butter)
1 Tbsp vanilla
1/2 cup sour cream
2 cups grated zucchini
2 1/2 cups flour
1/2 cup cocoa baking powder
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
pinch nutmeg
1/2 tsp cinnamon
1/2 cup semi sweet chocolate chips

Preheat oven to 375 degrees. 

In medium bowl mix sugar, eggs oil, vanilla and sour cream. Sift dry ingredients in separate bowl.
Stir wet mixture into dry mixture and mix well until batter is smooth. Fold in zucchini.

Drop batter into lined cupcake tins and sprinkle chocolate ships on top of batter. Bake 15-20 minutes or until tops spring back when touched. 


Makes 24 muffins

  4. I have to say that I made these muffins yesterday afternoon and they are good....very good. My other half came in from his gym session & hoovered one up, me being critical said 'think I should of grated the courgette bit finer'...there was a pause followed by him saying 'what courgette?' Lol.
